Wine Making - Blackcurrant Wine Recipe

A simple recipe for a medium sweet wine. Makes 1 gallon before racking off.

Blackcurrant Wine Recipe

Ingredients:

  • 2Kg Blackcurrants
  • 2Kg Sugar
  • Campden Tablets
  • Wine yeast (a Beaujolais style is best)
  • Nutrient
  • Water

Method:

  • Strip and rinse the blackcurrants
  • Put into a fermenting bin and crush with a potato masher or back of a large spoon
  • Pour over 1 gallon of boiling water. Once cooled a little, add 1 Campden tablet, crushed and dissolved in a little warm water.
  • Cover and leave for 3 days, stirring with a spoon sterilised with boiling water.
  • Strain into a large pan (a preserving pan is ideal) through a fine sieve, heat a little and dissolve the sugar into the liquid.
  • Add the yeast and nutrient.
  • Pour into a fermenting bottle with air-lock and leave until fermentation has finished.
  • Rack, as necessary, adding a Campden tablet after the first racking.
  • Syphon into bottles

Makes approx. 1 gallon of wine.
