Cheese Pudding Recipe

Ingredients:

  • 1 pint full or semi-skimmed milk
  • 2 oz butter
  • 4 oz breadcrumbs
  • 4 oz grated mature cheddar cheese
  • Salt  and cayenne pepper
  • 2 eggs

Method:

  1. Heat the milk, add the butter and let it melt.
  2. Add the breadcrumbs, cheese and seasoning and mix well. Cool slightly
  3. Mix in the beaten egg yolks.
  4. Whisk the egg whites to a stiff froth and lightly fold into the cheese mixture.
  5. Turn into a greased ovenproof pie dish and bake in a pre-heated oven at Gas Mark 7 (425°/220°C) for about 20 minutes until firm to the touch.

Serves 4. Nice with green beans.
