Ingredients:
- 1 pint full or semi-skimmed milk
- 2 oz butter
- 4 oz breadcrumbs
- 4 oz grated mature cheddar cheese
- Salt and cayenne pepper
- 2 eggs
Method:
- Heat the milk, add the butter and let it melt.
- Add the breadcrumbs, cheese and seasoning and mix well. Cool slightly
- Mix in the beaten egg yolks.
- Whisk the egg whites to a stiff froth and lightly fold into the cheese mixture.
- Turn into a greased ovenproof pie dish and bake in a pre-heated oven at Gas Mark 7 (425°/220°C) for about 20 minutes until firm to the touch.
Serves 4. Nice with green beans.
